Basic Roasted Sweet Potatoes

Basic Roasted Sweet Potatoes

I make these on my "Batch Cook Sunday" to feed my toddler & the rest of us. I'm all about simplicity & using 5 ingredients or less.

Ingredients
  • 1 bag of sweet potatoes
  • coconut oil
Instructions
  1. Heat oven to 400
  2. Dice sweet potatoes with a sharp kitchen knife into ½-1 inch cubes
  3. Place in a large baking dish or 2 small ones and add about 1-2 Tbsp of coconut oil
  4. Mix with your hands to coat all the potatoes
  5. Roast for 30-45 minutes depending on your oven, stirring half way
Notes
Kids especially love these with coconut oil b/c it makes them sweeter. Feel free to add salt or other herbs and seasoning. This is just a base recipe!
