
Mushroom & Turkey Bourguignon
This is one of my all time favorite comforting dishes that not only satisfies my comfort food craving, but is also super nutritious!

Ingredients
- 2 tbsp olive oil
- 2 tbsp butter, softened
- 1-1½ pounds ¼-inch sliced portobello or cremini mushrooms
- 1 pound ground turkey (optional)
- 1 carrot, finely minced
- 1 small yellow onion, finely diced
- 2 tbsp fresh thyme leaves
- salt & fresh ground pepper to taste
- 2 garlic cloves, minced
- 1 cup full-bodied red wine
- 2 cups vegetable stock
- 2 tbsp tomato paste
- 1½ tbsp all-purpose flour
- 2 heads of cauliflower for serving
Instructions
- Heat the olive oil in a medium Dutch oven or heavy sauce pan over high heat.
- Saute the carrots, onions, half the amount of thyme, a few good pinches of salt and several grinds of black pepper into the pan and cook for 10 minutes, stirring occasionally, until the onions are lightly browned.
- Add ground turkey, breaking up the pieces and cook until almost browned.
- Add mushrooms and cook about 3-4 minutes.
- Lower the flame to medium, add garlic and cook for just one more minute.
- Push vegetables to one side of the pot, add butter and flour, stirring to combine.
- Add the wine to the pot, scraping any stuck bits off the bottom, then turn the heat all the way up and reduce it by half. Stir in the tomato paste and the broth and simmer for 20 minutes, or until the mushrooms are very tender.
- Meanwhile, bring a large pot of water to a boil.
- Add cauliflower and cook until fork tender.
- Strain and puree with a hand blender or in a food processor.
- Season with the remaining thyme, salt and pepper.
- If the sauce is too thin, boil it down to the right consistency.
- Season to taste.
- To serve, spoon the mushroom stew over a bowl of cauliflower puree.
Notes
Can also be vegetarian. Just leave out the turkey and double the mushrooms, to 2lbs.
