
Turkey Chili
As soon as there's a chill in the air, all I want is chili. It's so comforting, and I'm always trying to get more veggies into my meals, so I really love this recipe! Plus there's a nice kick to heat things up 😉

Serves: 4-6
Ingredients
- large yellow onion, diced
- 2-4 cloves garlic, minced
- 2-3 medium-large “beefsteak” tomatoes, or 4-5 tomatoes on the vine, diced
- 1 lb ground turkey or chicken (or beef )
- 1-2 jalepeno peppers, diced
- 1 serrano pepper, minced (or to taste)
- 2 smallish zucchini
- 1½ cups of soaked, drained & cooked black beans, or 1 can (~14 oz) black beans (optional)
- 2 Tbsp chili powder
- 1 Tbsp cumin
- 1.5 tsp cayenne pepper
- 1 tsp coriander
- 1 tsp turmeric (optional)
- 2 tsp salt (or to taste)
- Black pepper
- 1 small container plain Greek yogurt (about 6 oz.)
- feta or your favorite cheese for topping
- red onion, diced for topping
- cilantro, chopped for topping
- avocado, slices or diced for topping
- tortilla chips
Instructions
- In a large pot or dutch oven, sauté diced onion in some olive oil on med-high.
- Get some color on the onion, but make sure you don’t let it burn (about 5 minutes).
- While the onions are cooking, prep your garlic and tomatoes.
- Add the minced garlic and stir, keeping heat fairly high, about 2-3 minutes.
- Next, add the tomatoes.
- Cook for a minute or so then turn down heat to medium.
- Cook for about 10 minutes to release their liquid.
- You may want to cover the pot half way through so you don’t lose too much liquid.
- Once the tomatoes have softened, add ground turkey and break it up so it’s in small pieces. Mix evenly.
- While the turkey is cooking, dice up peppers and chop zucchini.
- Once the turkey has cooked, about 5-8 minutes, add the peppers and zucchini.
- Next, add the beans. If using canned beans, make sure to drain and rinse them. Now stir in the spices and mix well.
- Turn down heat to low, and either add Greek yogurt now to the whole batch to give it a creamy texture, or add a spoonful to each serving. Some people may not want dairy, so I usually leave it up to them.
- Top with cilantro, red onion , feta (or your favorite cheese) and crumbled up tortilla chips (I like to mix my chips in it).
Notes
I chose to use fresh tomatoes in this recipe, but you can always use jarred tomatoes as well. Just do your best to avoid canned tomatoes due to the acidity & BPA exposure.
